Where can I buy your oysters?

Our first crop of oysters is anticipated to be ready for market in the summer of 2025. On average, it takes an oyster 14-18 months to grow to market size, and we want to ensure that we provide quality, healthy oysters.

Why shellfish farming?

Shellfish feed on phytoplankton, which are naturally present in ocean water. The result is nutritious and delicious food for humans, without the need for input that we see in traditional agriculture (it takes 2.5 pounds of grain to produce one pound of beef!).

On top of this, shellfish filter water and improve the quality of the habitat to support all forms of aquatic life. In other approaches, oyster reefs are used to protect landmass by acting as a barrier against storms and swells.

If oysters filter the water, how are they safe to eat?

Great question! An adult oyster can filter up to 50 gallons of water per day! They reduce excess nitrogen levels in the water by incorporating it into their shells; otherwise this nitrogen boosts algae growth, which reduces oxygen levels in the water.
